RE: Search for Protein

If I may as a personal question who told you that you needed 60 grams of protein per day, and who told your friend that they need 100? 60 grams might be understandable, if you are a body-builder, but 100 grams is far more than any health organization or doctor recommends, and can result in overtaxation of the kidneys, called ketosis, which is a dangerous condition.

The website I mentioned earlier, Vegan Health is probably the best, most balanced site on the web to find science-based information on plant-based diets.

If you want to get really detailed, I recommend reading The China Study by T. Colin Campbell but it is very scientific, so be prepared!

RE: Search for Protein

Hi Lindy,
If you eat a balanced, whole-food vegan diet, you will more than meet your need for protein. The website Vegan Health has some great information about protein: Vegan Health

Here is another link talking about vegan nutritional needs: Virginia Messina, RD

The main thing to remember is to eat a balanced diet, containing correct portions of all 4 food groups. Don't eat a ton of refined carbs, or a ton of fat, etc. If you eat a balanced, healthy diet, then YOU will be balanced and healthy! :D

Another Pumpkin pancake recipe

2 cups whole grain or whole wheat pastry flour
2 tablespoons packed brown sugar
1 tablespoon baking powder
1 1/4 teaspoons pumpkin pie spice
1 teaspoon salt
1 3/4 cups milk (soy or rice FAT FREE)
1/2 cup pumpkin
1 Tablespoon cornstarch mixed with a little water
2 tablespoons applesauce or applebutter

Combine flour, brown sugar, baking powder, pumpkin pie spice and salt in large bowl. Combine milk, pumpkin, cornstarch mixture and applesauce/butter in small bowl; mix well. Add to flour mixture. Stir just until moistened; cook on griddle.

These are so MOIST! Love them. I give all the credit to fatfreevegan.com who credited http://veggiekrista.blogspot.com/. Also for many pumpkin is in short supply, even the canned pumpkin. I found fat free pumkin pie filling at Whole Foods and used it, it has some sugar and spices in it.

ALso there are NOT low calorie but are very low fat. I make them on Sundays mornings and usually dont eat again until late afternoon! Traci

RE: great low fat vegan recipe site

Hello,

Yes I pretty much live on the fatfreevegan.com site. It has changed recently but is still good. If you scroll all the way down to the bottom there is a link that says 'oldsite' or oldfatfreevegan' or something like that. That takes you directly to the former site that lists all the recipes. The new one doesnt list them BUT you can search for just about anything and it will pop up.

The daily food journal....

I am embarking on a vegan diet after reading Dr. Barnard's book. The book makes a lot of sense to me and I look forward to seeing great results based on the recommendations.

After being diagnosed with Type 2 (08/09) I immediately lost 25 lbs after changing my diet, including carb counting. I have become very disciplined with my food intake through the simple process of keeping a food journal. I'm curious, is there a similar way to track my food with this program? For instance, I ate 2 dairy, 2 fruit, 5 starches, 5 veggies, 6 oz protein, and minimal fats every day (or as close as I could get). This regime of logging my food kept me on track every single day. I would love a similar method of tracking...I know I should shoot for 40 grams of fiber/day. Is there anything else I could "count" to keep me on track every day? Thank you for any suggestions.

Chef...

Hello all, I Am looking for the names and locations of chefs who specialize in vegan cooking. By this, I Am trending towards chefs who currently own and/or operate a restaurant or other cooking professional chef.

Any ideas or suggestions? Currently there is no limit on location.

I Am looking for creativity, presentation, taste and goodness.
