Congratulations!

My results

I began a vegan diet March 29 with a weight of 192. June 4, I weighed 173. I think those results are phenomenal, particularly in lieu of the fact that I had trouble, in London, of finding ways to eat vegan (solved by Indian restaurants). My goal is to lose another 13 pounds. My next HA1c is not measured until mid-July; in late February, it was 7%. I hope that it has dropped significantly.
I find that I have as much energy as 'before vegan;' that my daily blood sugars are in much better control; that I still have to be careful about portions.

RE: Dry Skin

Hi Kris!

Be sure to include a daily omega 3 source in your diet. Chia seeds, hemp seeds, purslane greens, English walnuts, ground flaxseeds, soybeans and pumpkin seeds are all great whole food sources. Plant based supplements include OmegaZen3, Chia Fresh and Arbonne EFAs. We like to encourage a variety of sources! Enjoy your day!

RE: Welcome!

Hello,

I have been vegan for 12 years and know the wonderful benefits of eating low-fat vegan. I also am extremely obese due to eating huge amounts of fat, refined carbs and lack of exercise and using food for comfort for so many years. I know eating wisely (vegan, low fat, whole foods) helps as I've lost weight and regained health following that plan, but haven't sustained it for more than 6 months at a time throughout the past 12 years.

Would this be a place to log in daily eating/exercising etc - like a progress journal for getting healthy as a vegan? If so, I'd like to begin doing that in the next week or 2.

My first goal is to get my kitchen and pantry ready - get rid of vegan junk foods and fats, stock the fridge with fruits and veggies, prepare beans etc. My second goal is to exercise. Starting out slowly again. I have very bad knees from carrying all this weight (400+) so swimming works best. It's been 6 months since I've exercised so just getting into the pool is going to be exercise itself.

I am going to set goals and give myself rewards but haven't made that plan yet.

I hope this will be a good place to work on these changes. Thank you for having this forum.

Sincerely,
Humbird

Hello! We suggest about 10 percent of your calories from fat. For most of us, this ranges from 20 to 30 grams per day. Since practically all fruits, vegetables, beans, and grains derive less than 10 percent of their calories from fat (few exceptions such as avocadoes), then you are good to eat as much of these food groups as you like.

I wouldn't worry too much about the flax and chia seeds. That's fine.

Cocotmilk and almond milk

Hello,

I need to know if I can use coconutmilk and/or almondmilk in stead of Soymilk?
Can I cook my oatmeal in one of the above mentioned milks instead of water?
According to Gabriel Cousens, MD (There is a cure for Diabetes) are soy products diabetogenic and kaphagenic food, that is a low mineral food that robs the body of minerals.
I don't know if this is true, for Dr. Neal Barnard doesn't talk about that. To me it is confusing.
I like coconutmilk and if I can use it safely, it would make me feel better.

Kind regards,

The ground flax is a good source of Omega 3's and chia is supposed to be good too. I would keep up on those and cut your fat in other foods. For instance, saute with water or veg broth instead of oils. Use olive oil and other healthy oils instead of the other less healthy oils. Good luck!!
